Meet the Chef

Chef Alejandro Ríos

A passion for tradition. A palate for innovation

Born and raised in Lima, Chef Alejandro Ríos grew up surrounded by the vibrant smells of street markets, the sizzle of fresh seafood, and the timeless recipes passed down through generations. Inspired by his grandmother’s rustic kitchen and trained in some of Peru’s most respected culinary schools, Alejandro blends deep cultural knowledge with modern technique.

His culinary journey has taken him across Peru — from the Amazon to Arequipa — learning from local farmers, fishermen, and artisans. What he discovered is simple: food is memory, and every ingredient tells a story.

At INTI, Chef Alejandro brings those stories to life. His menus honor Peru’s ancestral roots while daring to reimagine them. Using native ingredients like ají amarillo, huacatay, purple corn, and Andean herbs, he crafts dishes that are soulful, bold, and unmistakably Peruvian.
